Se trata de una cocina mediterr\u00e1nea donde reina el pescado y el marisco. Aunque hoy es posible comer casi de todo en cualquier parte y no faltan los restaurantes de distintas nacionalidades, lo ideal es paladear lo local con todos los sentidos.<\/p>\n<p>Parece que hay consenso en que el espeto de sardinas se ha convertido en un s\u00edmbolo de la cocina malague\u00f1a en los merenderos y restaurantes a pie de playa. El espeto consiste en ensartar las sardinas en ca\u00f1as y brasearlas con le\u00f1a en la arena. Normalmente se utiliza una peque\u00f1a barca encallada en la playa como fog\u00f3n, aprovech\u00e1ndolo adem\u00e1s para otros pescados a la brasa.<\/p>\n<p><!--more--><\/p>\n<p>Hay peces propios de la costa malacitana, casi siempre de peque\u00f1o tama\u00f1o, que se sirven como fritura y que se denomina gen\u00e9ricamente \u2018pesca\u00edto frito\u2019. Destaca la particular concha fina. Y tambi\u00e9n las gambas cocidas o a la plancha, las almejas, las navajas y las coquinas. Tampoco hay que desde\u00f1ar las paellas y arroces.<\/p>\n<p>Entre los platos de cuchara, servidos como primeros, resultan imprescindibles el gazpachuelo, el en blanco, el puchero o cocido malague\u00f1o, el gazpacho, la porra antequerana, el ajoblanco, la berza, la cazuela de fideos y el caldillo de pintarroja. El bendito gazpachuelo tiene casi la misma base que el en blanco, es decir, en principio una sopa caliente con pescado y patata, pero se completa con una mayonesa y se le suele echar alg\u00fan marisco como las gambas, con lo cual resultan sabores muy diferentes. Se diferencia del gazpacho en que su textura es m\u00e1s espesa y se sirve con trocitos de jam\u00f3n, huevo duro y pan frito. El ajoblanco, una sopa fr\u00eda, se elabora a base de almendras, pan y ajo, aceite de oliva, vinagre y sal, pero sin olvidar a\u00f1adir al caldo uvas o mel\u00f3n para conseguir la mezcla de salado y dulce.<\/p>\n<p>Tambi\u00e9n caben destacarse como entrantes o acompa\u00f1antes la ensalada malague\u00f1a (con bacalao y naranja), los boquerones al vinagre y las berenjenas fritas con miel de ca\u00f1a, por cierto un producto apenas utilizado en el resto del pa\u00eds.<\/p>\n<p>En el interior de la provincia y en los pueblos se ofrecen tambi\u00e9n otras recetas tan sabrosas como singulares: el plato de los montes, el chivo en salsa, el saltavallao, la sopa perota, el serranito, los bu\u00f1uelos de bacalao, el potaje de tagarninas o de hinojos, la porra de naranja, el ajobacalao, los caracoles, la papand\u00faa, las migas, el piment\u00f3n, el bienmesabe y muchos m\u00e1s.
