Por eso, tras cada plato hay una meticulosa labor de investigaci\u00f3n. Y es que en el restaurante de Paco Morales tienen un curioso medidor de etapas. Ya que en marzo de 2016 comenzaron con su a\u00f1o I en el siglo XXI. Que corresponde a la cocina de los siglos X y XI. En este momento <a href=\"https:\/\/www.hammamalandalus.com\/blog\/10-cosas-que-solo-entenderas-si-eres-de-cordoba\/\" target=\"_blank\" rel=\"noopener noreferrer\">C\u00f3rdoba<\/a> era la capital del Califato de Occidente y gobernaba Abderram\u00e1n III. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">La propuesta del chef Paco Morales y su equipo en 2016 fue de tres men\u00fas diferentes. Sus nombres:\u00a0<\/span><i><span style=\"font-weight: 400;\">Qurtuba, Madinat al-Zahara<\/span><\/i><span style=\"font-weight: 400;\"> y <\/span><i><span style=\"font-weight: 400;\">Al Andalus. <\/span><\/i><span style=\"font-weight: 400;\">Todav\u00eda no se sab\u00eda nada de Am\u00e9rica. En esta ocasi\u00f3n los men\u00fas se llaman Bereber, Tuareg y Almor\u00e1vide. Y recogen platos de la cocina almor\u00e1vide y almohade. En esta \u00e9poca hab\u00eda ca\u00eddo el Califato de C\u00f3rdoba y se hab\u00edan perdido los reinos de Taifas. Mientras, los imperios Almor\u00e1vide y Almohade intentaban conquistar el norte de \u00c1frica y el sur de Espa\u00f1a. Y la reconquista cristiana se hac\u00eda cada vez m\u00e1s latente en la pen\u00ednsula ib\u00e9rica. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Este lugar situado en el barrio del Ca\u00f1uelo es como una m\u00e1quina del tiempo. Y traslada al que lo visita a Al \u00c1ndalus. La experiencia no es solo para el paladar. Ya que los comensales que tengan la suerte de degustar la gastronom\u00eda de Noor, lo har\u00e1n en un comedor con motivos geom\u00e9tricos nazar\u00edes. La pr\u00f3xima temporada Paco Morales ya viajar\u00e1 a los siglos XIV y XV. En esta fecha los platos ya contaban con los \u201cex\u00f3ticos\u201d ingredientes que hab\u00edan tra\u00eddo de las tierras lejanas de Am\u00e9rica. Como la patata, el pimiento o el tomate. Cocina andalus\u00ed contempor\u00e1nea porque \u201cactualiza base y materia prima a partir de la historia. Noor es un concepto vivo, cada dos a\u00f1os se reinventar\u00e1. Entre sus platos se encuentran delicias como el pan de lim\u00f3n quemado con bonito semicurado y Albaqdunis, el Karim de almendra tostada, erizo del S\u00e1hara y manzana verde con Zumaque, los percebes templados con n\u00e9ctar de cebolla, berza frita y Arg\u00e1n o las espinacas con queso de oveja, nueces frescas y romero. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cPara m\u00ed el origen tiene much\u00edsimo que ver con nuestra ciudad, con nuestra cultura, con nuestra historia. Intentamos constantemente hacer cosas bell\u00edsimas, que te entren mucho por los ojos, pero tambi\u00e9n tiene que haber sentimientos de origen.
